Pickled Pink Onions

Red onions are perfect for this pickling recipe, but feel free to get creative. This pickling liquor works great with your favourite veggies. Pickled foods aren’t just tasty - they’re also a gut health powerhouse.

Ingredients

  • 200g x red onions thinly sliced
  • 125ml x White wine vinegar
  • 50g x caster sugar
  • Your choice of herbs and spices

Method

  • Step 1

    Place vinegar, sugar, herbs and spices in a pan and bring to the boil.

  • Step 2

    Thinly slice the red onions and place in a heat proof bowl

  • Step 3

    Once the liquor is boiling, take off the heat.

  • Step 4

    Pour the liquor over the onions, cover with cling film and leave to cool.

Tips

  • The liquor can be strained and reused for a second batch.
  • Try this with carrots, radishes, cucumbers, or even cauliflower.
  • Pickled onions will keep for up to 2 months in an airtight container in the fridge.
