Traybakes are one of the most practical ways to cook: everything goes in together and the oven does the work. This recipe teaches timing and size control so ingredients cook evenly. The fat from the drumsticks helps cook the vegetables, creating flavour without extra ingredients.
Preheat the oven to 200°C (fan 180°C).
Peel and chop 2 carrots into chunks.
Chop 2 peppers, 1 courgette and 1 red onion into similar-sized pieces.
Place the vegetables onto a large baking tray.
Add 8 chicken drumsticks.
Drizzle with 2 tbsp sunflower oil and season with salt.
Mix everything together so the vegetables are coated and spread into a single layer.
Bake for 45–50 minutes until the chicken is cooked through, the skin is crisp and the vegetables are softened and lightly charred.
