Assembly cooking is one of the lowest-stress ways to cook. Everything is prepared first, then cooked together. This recipe also reinforces how the same ingredients can be used in different ways across the book. The high-heat oven does the work.
Preheat the oven to 200°C (fan 180°C).
Cut 500 g chicken breast into even chunks.
Cut 1 pepper, 1 courgette and 1 onion into similar-sized pieces.
Thread the chicken and vegetables onto skewers, alternating pieces.
Place onto a baking tray.
Drizzle with 2 tbsp sunflower oil and season with salt and black pepper.
Cook for 20–25 minutes, turning once halfway through, until the chicken is cooked through and lightly charred at the edges.
