This recipe introduces crumb coating. The idea of using crushed crisps instead of plain breadcrumbs isn't a trick; it's a genuine flavour shortcut that brings seasoning and crunch in one step. The air fryer does the work that a deep fat fryer would normally do, with less oil, less mess, and less risk.
Preheat the air fryer to 200°C.
Wash and cut 800 g potatoes into chunky chips.
Place into a bowl, add 1 tbsp sunflower oil and a pinch of salt, and mix well.
Air fry for 25–30 minutes, shaking halfway through, until golden and crisp.
While the chips cook, crush the crisps into fine crumbs.
Beat 1 egg in a bowl.
Dip each fish fillet into the egg, then press into the crushed crisps until well coated.
Place into the air fryer basket and drizzle with the remaining 1 tbsp oil.
Air fry at 190°C for 8–10 minutes until crisp and cooked through.
