Ingredients

  • ¼ white cabbage
  • 1 carrot
  • 1 apple
  • 2 tbsp sunflower oil
  • 1 tbsp vinegar
  • Salt

Method

  • Step 1

    Finely shred ¼ white cabbage using a sharp knife.

  • Step 2

    Peel and grate 1 carrot and 1 apple.

  • Step 3

    Add everything to a large bowl.

  • Step 4

    Add 2 tbsp sunflower oil, 1 tbsp vinegar and a good pinch of salt.

  • Step 5

    Mix well until everything is evenly coated.

  • Step 6

    Taste and adjust seasoning if needed — it should taste fresh, slightly sharp and lightly salted.

Tips

  • Best eaten fresh. Can be stored in the fridge for up to 24 hours.
  • The technique of shredding finely and dressing with oil, vinegar and salt is the basic formula for almost every cold salad.
  • Getting that balance right with enough acid, fat and seasoning, is a skill that transfers to anything you dress with a simple vinaigrette.
  • The apple adds sweetness and juice that works particularly well against richer main dishes.
