This soup is one of the simplest complete meals in the book. Lentils thicken the soup naturally while also adding protein, meaning no extra steps are needed to create a filling dish. The method of softening onion, adding base ingredients, simmering and blending is a template you can apply to almost any soup.
Finely chop 1 onion.
Heat 1 tbsp sunflower oil in a saucepan over medium heat.
Add the onion and cook for 8–10 minutes until softened.
Add 2 tins plum tomatoes, 150 g red lentils and 1 litre vegetable stock.
Bring to the boil, then reduce to a simmer and cook for 25 minutes until the lentils are soft.
Add 2 tsp sugar and season with salt and black pepper.
Blend until smooth using a stick blender or leave chunky if preferred.
