Ingredients

  • Broth ingredients:
  • 100g miso paste
  • 1L water
  • 20ml sesame oil
  • 50ml soy
  • 50g ginger paste
  • 30g garlic paste
  • Carb options:
  • Rice noodles
  • Udon noodles
  • Soba noodles
  • Vegetable options:
  • Carrots (thinly sliced)
  • Savoy cabbage (shredded)
  • Broccoli
  • Peppers (thinly sliced)
  • Mushrooms (sliced)
  • Peas
  • Red onions (thinly sliced)
  • Spring onions (for garnish)
  • Pickled veg (optional for topping)
  • Protein options:
  • Soft-boiled egg
  • Tofu (fried or steamed)
  • Steamed chicken
  • Baked white fish

Method

  • Step 1

    Combine miso paste, water, sesame oil, soy sauce, ginger paste, and garlic paste. Bring to a gentle boil, then simmer for 10–15 minutes.

  • Step 2

    Prepare your noodles of choice and chop your vegetables.

  • Step 3

    Add vegetables to the simmering broth for a few minutes.

  • Step 4

    Prepare your protein. Soft-boil eggs for 6 minutes, steam or bake your chosen protein, or pan-fry tofu.

  • Step 5

    Assemble your bowl: start with noodles, ladle over the hot broth, then pile on your vegetables and protein. Garnish with spring onions, fresh chilli and coriander.
